Asian Chicken Salad Recipe

Ingredients
  • 1 tbsp sesame oil .
  • 3/4 tsp chili paste (I've used Texas Pete's to substitute) .
  • 1/4 c sliced cilantro .
  • 2 tsps brown sugar .
  • 2 tbsps sesame oil .
  • 3 tbsps rice wine vinegar .
  • 3 tbsps hoisin sauce .
  • 2 tbsps peanut butter .
  • 1 lb boneless skinless chicken breasts .
  • 1 bunch sliced onions .
  • Dressing .
  • 16 wonton wrappers, cut into strips .
  • 1/2 c slivered almonds .
  • 1 tsp fresh ginger, grated .
  • 2-3 sliced romaine lettuce hearts .
  • 2 minced garlic cloves .
  • 1 c mandarin oranges, well drained .
  • 1 c shredded carrots

Directions
  • Step #1 Place the chicken in a ziplock with 2 T sesame oil & 2 garlic cloves.
  • Step #2 Let marinade for 20 min.
  • Step #3 Whisk all dressing ingredients together till well incorporated, set aside.
  • Step #4 Place wonton strips onto sprayed baking sheet (or you can just fry them) Bake just till browned at 350° (watch closely).
  • Step #5 Grill chicken breasts till no longer pink.
  • Step #6 Cool & slice into strips.
  • Step #7 Toss romaine, carrots, cilantro, & onions.
  • Step #8 Then add chicken, wontons, almonds & mandarin oranges & toss w/ dressing till well coated.
  • Step #9 Serve.
