Spice And Coconut Cookies Recipe

Ingredients
  • 3 c all-purpose flour .
  • 2 large eggs .
  • milk .
  • 1 1/2 c granulated sugar .
  • 1 1/2 c sifted powdered sugar .
  • 1/2 c coconut milk .
  • 2 tsps cream of tartar .
  • 1 tsp baking soda .
  • 1/2 c sliced pitted dates .
  • 1/2 c vegetable shortening .
  • 1/4 tsp salt .
  • 1 1/4 c coconut, toasted .
  • 1/2 c butter, softened

Directions
  • Step #1 in a small saucepan, mix coconut milk & mulling spice.
  • Step #2 Bring just to boiling; reduce heat to low.
  • Step #3 simmer, covered over low heat/flame for 5 mins.
  • Step #4 strain mixture through a fine mesh sieve; discard mulling spice.
  • Step #5 reserve 2 tbls of the spiced coconut milk mixture, cover & chill for use in frosting.
  • Step #6 add sliced dates to remaining mixture -- cover date mixture & set aside.
  • Step #7 for cookie dough.
  • Step #8 In a large-ish mixing bowl, beating shortenig & butter with an electric mixer on medium to high speed for 30 seconds.
  • Step #9 add granulated sugar, cream of tartar, baking soda & salt; beat until mixd.
  • Step #10 beat in eggs until mixd.
  • Step #11 Beat in as much flour as you can.
  • Step #12 stir in the any remaining flour.
  • Step #13 stir in the the date mixture.
  • Step #14 cover & chill for 2-4 hrs or until easy to handle.
  • Step #15 preheat your trusty oven to 375*.
  • Step #16 shape dough into 1" balls.
  • Step #17 place balls 2" apart on an ungreased cookie sheet.
  • Step #18 bake in preheated oven for 8-10 mins or until lightly browned.
  • Step #19 transfer cookies to a wire rack & cool.
  • Step #20 meanwhile to prepare frosting -- in a small bowl, stir this together powdered sugar & reserved coconut milk mixture.
  • Step #21 add enough milk (1-2 tsps) to make a frosting of desired consistency.
  • Step #22 spread or drizzle cooled cookies with frosting.
  • Step #23 if desired.
  • Step #24 sprinkle with toasted coconut.
  • Step #25 to store cookies, place them in layers seperated by waxed paper in an airtight container, cover.
  • Step #26 store at about room temp for up to 3 days or freeze unfrosted cookies up to 3 minths.
  • Step #27 thaw cookies & then frost.
