Lemon-irish Whiskey Cake Recipe

Ingredients
  • 1/4 c Irish whiskey .
  • 2 c flour .
  • 3/4 c almonds, ground .
  • 1 lemon, zest of, cut into julienne .
  • 3 eggs, beaten .
  • 3/4 c butter, at about room temp .
  • 1 pinch salt .
  • 3/4 c superfine sugar (regular sugar can be processed in a mixer of food processor/blender)

Directions
  • Step #1 Place julienned lemon zest in a small bowl.
  • Step #2 Add whiskey & let soak overnight.
  • Step #3 The next day, preheat your trusty oven to 350°F Grease a 9 inch cake pan.
  • Step #4 Cream the butter & sugar together until light & fluffy.
  • Step #5 Whisk in the eggs.
  • Step #6 Sift the flour & add to the butter mixture along with the salt.
  • Step #7 Stir to mix.
  • Step #8 Fold in the ground almonds.
  • Step #9 Strain the whiskey, discarding the zest, & stir the whiskey into the batter.
  • Step #10 Pour into the prepared pan, until golden brown, & bake about one hr, & a toothpick inserted in the center comes out clean.
