Spanish Potato Tortilla Recipe

Ingredients
  • 6 eggs .
  • 1/4 c olive oil .
  • 3 potatoes, peeled & halved .
  • 1 onion, thinly sliced

Directions
  • Step #1 Cook potatoes in boiling salted water until tender.
  • Step #2 Drain well & slice.
  • Step #3 Heat oil in 20cm frying pan.
  • Step #4 Add potato slices & onion & fry for 5 mins until tender & golden.
  • Step #5 Whisk eggs & season well.
  • Step #6 Pour over potato & onion mixture.
  • Step #7 Cook tortilla over low heat/flame for 10 mins until eggs set.
  • Step #8 Loosen edges of tortilla with spatula & slide onto a plate & turn the tortilla over to cook the underside again for another 5-10 mins.
  • Step #9 Or you can finish under a grill the top side to brown.
  • Step #10 Stand for 10 mins before cutting to serve.
