Step #1 In a capacity pot or dutch oven, the celery , simmer the meat with the marrow bone, one quartered onion, the garlic cloves & salt until fully cooked.
Step #2 On a skillet in oil that's not too hot, fry the chicken breast cubes & dry chipotles until chicken starts to brown.
Step #3 Take the onion garlic & celery out of the stew, & pour the rendered stock over the chicken.
Step #4 Add the beef, tomato, chipotles & the epazote.
Step #5 Simmer until chicken cubes are cooked.
Step #6 Add the potatoes, the zucchini & the peas.
Step #7 Simmer until zucchini is cooked.
Step #8 Serve with the remaining onion, sliced, lime juice to taste, & sliced or cubed avocado.
