Cheese And Pepper Enchiladas Recipe

Ingredients
  • 2 medium onions, sliced .
  • 1 tsp ground coriander .
  • 8 corn tortillas .
  • 1/2 c cottage cheese .
  • 2 tbsps olive oil .
  • 2 c canned tomatoes, undrained .
  • salt .
  • 1/2 green pepper, coarsely sliced .
  • 1 tbsp chilies, minced .
  • 2-3 tbsps chilies, minced .
  • Hot Sauce .
  • 1 small onion, coarsely sliced .
  • 2 tsps ground cumin .
  • 1 1/2 c cheddar cheese, grated .
  • salt .
  • 2 1/2-3 c sliced bell peppers (use a variety of colors) .
  • 1 tsp ground cumin .
  • vegetable oil (for frying) .
  • 8 oz cream cheese .
  • 1-2 large garlic clove, minced

Directions
  • Step #1 In a large skillet, garlic, & cumin in the oil for 5-7 mins, saute the onions, chiles, until onions are soft.
  • Step #2 Add the sliced peppers, & cook on low heat for about 10 mins, cover, until peppers are tender.
  • Step #3 Remove from heat & stir in the all the cheeses.
  • Step #4 Add salt to taste & set aside.
  • Step #5 Preheat oven to 350°F.
  • Step #6 Soften tortillas by frying individually in a little oil for just a few seconds on each side.
  • Step #7 Drain well on paper towels.
  • Step #8 Place a tortilla on a flat surface.
  • Step #9 Spoon 1/4 - 1/2 c of cheese & pepper filling onto the half of the tortilla closest to you.
  • Step #10 Roll & place, seam side down,in a greased baking pan.
  • Step #11 Bake tightly covered for 20-25 mins.
  • Step #12 When the enchiladas are baking, prepare the hot sauce.
  • Step #13 Puree the tomatoes, chiles, bell peppers, onions, coriander & cumin in a mixer until smooth.
  • Step #14 Simmer, uncovered, on how heat for at least 20 mins, stirring every once in awhile.
  • Step #15 Add salt to taste.
  • Step #16 (If you use fresh tomatoes, you may need to simmer for even longer.
  • Step #17 ).
  • Step #18 Serve the enchiladas on a bed of rice & top this with the hot sauce.
