Russian-style Turkey Cutlets Recipe

Ingredients
  • 2 tbsps cooking oil .
  • 1 c dry breadcrumbs .
  • 5 tbsps butter, 3 of them at about room temp .
  • 1/2 tsp dried dill .
  • 1 egg .
  • 1/2 tsp salt .
  • 1/4 c half-and-half .
  • 1 lb ground turkey .
  • 2 slices good-quality white bread, crusts removed .
  • 1/4 tsp fresh ground black pepper

Directions
  • Step #1 Break the bread into pieces.
  • Step #2 In a large bowl, soak the bread in the half-and-half until the liquid is absorbed, about 2 mins.
  • Step #3 Mix in the turkey, pepper, egg, salt, dill, & the 3 tbsps room-temperature butter.
  • Step #4 Put in the freezer for about 10 mins to firm up.
  • Step #5 Remove the turkey mixture from the freezer; it will still be very soft.
  • Step #6 Form the mixture into four oval cutlets & coat them with the bread crumbs.
  • Step #7 In a large, nonstick frying pan, heat the remaining 2 tbsps butter & the oil over moderate heat.
  • Step #8 Cook the cutlets until golden brown & just done, 4 to 5 mins per side.

  • Step #10 Sautéed mushrooms are the traditional Russian accompaniment to turkey cutlets.
