Step #2 Then remove & allow them to cool for 10 mins or so.
Step #3 Combine chili seasoning, worcestershire, brown sugar, vinegar, apple juice, chili powder and, mesquite seasoning to form a runny paste.
Step #4 Paint this sauce on the cooled ribs & grill them over charcoal for about 10-12 mins to a side until there are a few small blackened spots.
Step #5 This is done over a covered grill, turning as necessary to brown them up.
Step #6 If you can't find mesquite seasoning, substitute 1/8 tsp liquid smoke & a tsp of seasoned salt.
Step #7 When the ribs come off the grill, place them In a large-ish, flat baking pan sprayed with PAM & place a couple of pads of butter on each bunch of the ribs.
Step #8 Cover up the pan/ribs with aluminum foil wrap & bake in the oven at 275 degrees for 90 mins.
Step #9 At the end of 90 mins, remove the ribs from the oven, paint them heavily on both sides with the barbeque sauce.
Step #10 Re-cover the pan/ribs & bake for another 20 mins at the same temperature.
Step #11 Serve hot with more barbeque sauce at the table.
