Kardemummakaka (cardamom Coffee Cake) Recipe

Ingredients
  • 2 tsps cardamom seeds .
  • 2 1/2 c all-purpose flour .
  • 1 c butter (1/2 lb, 2 sticks) .
  • 2 1/2 tsps baking powder .
  • 3/4 c milk .
  • 1 egg .
  • 1 tbsp sugar .
  • Topping .
  • 1/2 tsp salt .
  • 1 tbsp thinly sliced almonds .
  • 1 tsp allspice .
  • 3/4 c sugar

Directions
  • Step #1 Preheat oven to 350°F Grease & lightly flour a 9x9 square cake pan.
  • Step #2 Shake out any excess flour.
  • Step #3 Sift together the flour, salt & baking powder; set aside.
  • Step #4 Sift sugar, set aside.
  • Step #5 Crush cardamom seeds (use a mortar & pestle or a rolling pin).
  • Step #6 If using pods, remove the white hull pieces.
  • Step #7 Heat milk to lukewarm (in microwave, heat in a microwave safe c or bowl at 70% power for about 45 seconds).
  • Step #8 Set milk aside.
  • Step #9 Melt butter (in microwave, heat at 70% power for about 1 mins, then stir until completely melted).
  • Step #10 Set melted butter aside.
  • Step #11 Beat egg until fluffy.
  • Step #12 Blend in sifted sugar.
  • Step #13 Add crushed cardamom seeds.
  • Step #14 Alternate adding lukewarm milk & the flour mixture, mixing well.
  • Step #15 Add melted butter & beat batter until well mixed.
  • Step #16 Pour batter into cake pan.
  • Step #17 Mix together the allspice & sugar.
  • Step #18 Sprinkle top evenly on top of the cake in the pan.
  • Step #19 Sprinkle top sliced or sliced almonds on top, pressing them into the batter very lightly.
  • Step #20 Bake at 350°F for 35-45 mins, until a toothpick inserted near the center comes out clean.
  • Step #21 Cool slightly before cutting.
  • Step #22 Tip: this recipe doubles well, making 2 9x9 cakes.
  • Step #23 Freeze one, then warm it up for later use.
