Wacky Lemon Cake With 7-minute Lemon Frosting Recipe

Ingredients
  • 1/2 tsp lemon extract .
  • 1 tsp baking soda .
  • 1 c sugar .
  • 3/4 c cold water .
  • 1/4 tsp almond extract .
  • 1 1/2 c flour .
  • 1/8 tsp cream of tartar .
  • 1/2 tsp salt .
  • 2 tbsps water .
  • 2 tsps water .
  • Wacky Lemon Cake .
  • 1 egg white .
  • 1 pinch salt .
  • 1 tbsp vinegar .
  • 7-Minute Lemon Frosting .
  • 6 tbsps vegetable oil .
  • 1 tsp almond extract .
  • 1/2 c granulated sugar .
  • 1/4 c fresh lemon juice

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Make cake - sift dry ingredients together in 8 x 8 pan & make 3 holes.
  • Step #3 Pour vinegar in first hole, vegetable oil in second hole, & almond extract in third hole.
  • Step #4 Pour cold lemon juice & water over everything.
  • Step #5 Mix all ingredients thoroughly (do not beat).
  • Step #6 Bake in same 8 x 8 pan that ingredients were mixed in for 35 mins or until center is firm.
  • Step #7 Cool completely.
  • Step #8 Make frosting - mix sugar, water, cream of tartar & salt in saucepan.
  • Step #9 Bring to boil, stirring until sugar dissolves.
  • Step #10 While beating constantly, very slowly add sugar syrup to egg white in mixing bowl.
  • Step #11 Continue beating until stiff peaks form (about 7 mins).
  • Step #12 Beat in extracts.
  • Step #13 Smooth frosting over cooled wacky lemon cake.
