Yellow Curry Paste Recipe

Ingredients
  • 1 tsp curry powder .
  • 1/2 tsp white pepper powder .
  • 5 oz shallots, sliced (140g) .
  • 1 tbsp fresh lemongrass, that has been thinly sliced crossways .
  • 7 dried hot red chilies (long ones of the cayenne variety) .
  • 1 tsp ground coriander .
  • 1/2 tsp ground turmeric .
  • 10 garlic cloves, peeled & sliced (10 if small or 5 if large) .
  • 1/2 tsp shrimp paste, sliced or 3 anchovies, from a can sliced .
  • 1/2 tsp ground cumin .
  • 1/2 tsp ground cinnamon .
  • 1 inch piece fresh ginger, peeled & sliced (2 1/2cm)

Directions
  • Step #1 Soak the red chillies in 5 tbsps hot water for 1-2 hrs.
  • Step #2 (You could also put them in a microwave oven for 2-3 mins & then let them sit for 20-30 mins.
  • Step #3 ) Put the chillies, together with their soaking liquid, into a mixer along with all the remaining ingredients in the order listed.
  • Step #4 Blend, pushing down with a rubber spatula as many times as necessary, until you have a smooth paste.
  • Step #5 What you do not use as soon as possible should be put in the fridged or frozen.
