Ingredients
1/2 c creme fraiche (or whipped cream) .
1 lb prunes, pitted .
1/2 c walnuts, pieces .
1/2 c sugar .
3 c tea, strong
Directions
Step #1 Brew 3 c very strong black tea, such as Irish Breakfast.
Step #2 Transfer to a large bowl while still hot.
Step #3 Add 1 lb.
Step #4 pitted prunes (California prunes are plumper & therefore best) & soak overnight.
Step #5 Remove prunes with a slotted spoon to a clean work surface & set aside.
Step #6 Transfer tea to a medium saucepan & add 1/2 c sugar.
Step #7 Bring to a boil over high heat & reduce tea until it is the consistency of a thin syrup, about 10 mins.
Step #8 Meanwhile, stuff each prune (into the slit made when pitting prune) with a large walnut piece.
Step #9 Place stuffed prunes In a large-ish shallow bowl or platter, in concentric circles.
Step #10 Pour tea syrup over prunes & cool to about room temp.
Step #11 Serve with crème fraîche on the side.
Step #12 Store covered in refrigerator for up to 1 week.
