Sweetcorn Parcels Recipe

Ingredients
  • 2 onions .
  • icing sugar (optional) .
  • 1 tbsp oil .
  • 4-5 leaves fresh basil .
  • string .
  • 6 large corn on the cob, with leaves .
  • salt (to taste) .
  • 1 c milk

Directions
  • Step #1 cut the corn on the cob away from the leaves, leaving the leaves connected to the stalk,.
  • Step #2 take the sweetcorn off of the cob,.
  • Step #3 mash the sweetcorn & the basil, well, in a food processor/blender,.
  • Step #4 leave to one side,.
  • Step #5 select the biggest, from the stalk, & cut them off, & cleanest leaves,.
  • Step #6 altogether you will need 12-16 leaves,.
  • Step #7 cut the onions into small cubes, & fry in the oil until golden brown,.
  • Step #8 add the sweetcorn, & the milk,.
  • Step #9 stir well, & season this with salt(to taste),.
  • Step #10 lay the leaves, with one in the middle, so they are in a cross shape, & two laying across it,.
  • Step #11 add a large dollop of the sweetcorn mix into the middle, & fold up the leaves to enclose it (or make a 'parcel'),.
  • Step #12 tie up with string, making sure that the mix doesn't leak out.
  • Step #13 put the parcels into a large pot of boiling water, & boil for 45 mins.
  • Step #14 to serve, cut the string & open the parcel,.
  • Step #15 sprinkle with icing sugar (optional).
  • Step #16 enjoy! (but remember, don't eat the leaves (or the string!)).
