Cranberry, Sausage And Apple Stuffing Recipe

Ingredients
  • 1 lb sweet Italian sausage, casings removed
  • 2 c sliced celery
  • 2 tart green apples - peeled, cored & sliced
  • 1 1/3 c chicken broth
  • 1 c dried cranberries
  • 12 c white bread cubes
  • 2 tsps dried rosemary, sliced
  • 4 tsps poultry seasoning
  • salt & pepper to taste
  • 1/4 c butter
  • 6 c coarsely sliced leeks

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Spread bread cubes in a single layer over two baking sheets.
  • Step #3 Bake until slightly dry, about 15 mins.
  • Step #4 In a large skillet over med-heat/flame, cook sausage, crumbling coarsely, for about 10 mins or until evenly brown.
  • Step #5 Drain off grease, & transfer sausage to a large bowl.
  • Step #6 Melt butter in the skillet; add leeks, celery, apples, & poultry seasoning.
  • Step #7 Cook, stirring frequently, for about 10 mins.
  • Step #8 Stir in the rosemary & dried cranberries.
  • Step #9 Mix leek mixture & bread cubes with sausage in bowl.
  • Step #10 Spoon stuffing into turkey, packing loosely.
  • Step #11 Bake remaining stuffing in a buttered baking dish, covered, at 350 degrees F (175 degrees C) for about 45 mins.
  • Step #12 Uncover, & bake another 15 mins to brown top.
