My Favourite Chicken Curry Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • 2 (440 g) cans crushed tomatoes .
  • 2 yellow onions, Sliced .
  • 1/2 tsp chili powder .
  • 1 kg chicken thigh fillets, cubed into bite size pieces (Can use bone in if you like) .
  • 4 c chicken stock .
  • 1 tbsp brown sugar .
  • 2 tbsps curry powder, adjust to your taste (I use Keens) .
  • 1 tbsp cumin powder .
  • 2 tbsps vegetable oil .
  • 1/3 c plain flour .
  • 1/4 c tomato paste

Directions
  • Step #1 Remove skin from chicken pieces, discard skin.
  • Step #2 Toss chicken in flour, shake off excess.
  • Step #3 Heat 1 tbsp of the oil In a large-ish pan, cook chicken, in batches until browned.
  • Step #4 Drain on absorbent paper.
  • Step #5 Heat remaining oil in pan, chilli, cook onion, garlic, cumin & curry powder until fragrant.
  • Step #6 Return chicken to pan with the undrained tomatoes, paste, sugar & stock.
  • Step #7 Bring to the boil, simmer uncovered for 30 mins or until chicken is tender.
