Step #1
Make the salsa: In a medium-size bowl, sugar, pineapple chunks, mix oranges, minced jalapenos, sliced red bell pepper, mango, 3 tbsps orange juice, & cilantro.
Step #2 Mix well, & put in the fridge covered.
Step #3 In a non-reactive bowl, olive oil, cayenne pepper, mix 1/2 c orange juice, & pineapple juice concentrate.
Step #4 Place swordfish steaks in bowl, & turn to coat well.
Step #5 Marinate the swordfish in the mixture for 30 mins.
Step #6 Prepare an outside grill with oiled rack set 6 inches from the heat source.
Step #7 On a gas grill, set the heat to medium-high.
Step #8 Grill the swordfish on each side for a total time of about 12 to 15 mins, until opaque in the center.
Step #9 Serve the grilled fish with the salsa.
