Banana Cream Cake Recipe

Ingredients
  • 75 g plain flour, sifted .
  • 3 eggs .
  • 2 drops lemon juice .
  • 150 g caster sugar .
  • icing sugar, to dust .
  • 225 g bananas, slices .
  • 150 ml double cream, whipped .
  • 50 g shredded coconut

Directions
  • Step #1 Preheat oven 190c.
  • Step #2 Grease a deep 20cm cake tin, line base with paper.
  • Step #3 Place the eggs & sugar in a bowl & whisk until thick & holds shape when tipped.
  • Step #4 Fold in the flour.
  • Step #5 Pour in to tin & level.
  • Step #6 Bake 20-25 mins until cake springs back when lightly pressed in the centre.
  • Step #7 Turn out on to wire rack peel off paper & cool.
