Penne Nicoise Recipe

Ingredients
  • salt, to taste .
  • 2 garlic cloves, minced .
  • 1 lb penne pasta .
  • 1 lb red potatoes, cut into 1 inch pieces (about 3 c) .
  • 1 lb green beans, cut into 1 inch lengths (about 4 c) .
  • 1 c kalamata olives, pitted & sliced .
  • 1/2 tsp fresh ground black pepper .
  • 1 lb plum tomatoes, ripe, sliced (about 3 c) .
  • 2 tbsps olive oil .
  • 2 tbsps balsamic vinegar .
  • 1 medium yellow onion, thinly sliced

Directions
  • Step #1 Bring large pot of salted water to boil & add green beans & potatoes.
  • Step #2 Return to boil & add pasta.
  • Step #3 Cook, until the pasta is al dente, stirring every once in awhile, about 11 mins or according to package directions.
  • Step #4 Meanwhile, in small skillet heat the olive oil over med-heat/flame.
  • Step #5 Add onion & garlic & cook, until onion is soft, stirring often, about 5 mins.
  • Step #6 Remove from heat & stir in the tomatoes & olives & set aside.
  • Step #7 Drain the pasta, beans & potatoes, reserving 1/2 c of pasta water.
  • Step #8 Transfer to serving bowl.
  • Step #9 Add the tomato mixture, vinegar, pepper & salt & toss to mix.
  • Step #10 If pasta seems too dry add reserved pasta water as needed, a little at a time.
