Apple Cake With Cinnamon Sugar Topping Recipe

Ingredients
  • 1 c sugar .
  • 1 tsp salt .
  • 1/2 c sugar .
  • 1 tsp vanilla extract .
  • 1 (20 oz) can sliced apples, drained & patted dry .
  • 1 tsp cinnamon .
  • 2 tsps baking powder .
  • 2 large eggs, at about room temp .
  • Cinnamon Sugar Topping .
  • 1 c milk .
  • 2/3 c vegetable oil (canola is preferred) .
  • 2 c all-purpose flour

Directions
  • Step #1 To make the cinnamon sugar topping: in a small bowl, mix together the 1/2 c sugar & 1 tsp cinnamon; set aside.
  • Step #2 To make the cake: In a small mixing bowl, sift together the flour, baking powder, & salt; set aside.
  • Step #3 In a larger mixing bowl, sugar, beat together the oil, & eggs, using an electric mixer on medium speed; beat for about 3 mins or until light & thick.
  • Step #4 Add the dry ingredients to the egg/sugar/oil mixture in three parts, alternating with the milk & vanilla, beating after each addition until smooth.
  • Step #5 In another bowl, toss the apples with half the cinnamon-sugar topping; then stir half the apples into the batter.
  • Step #6 Pour the batter into a greased & lightly floured 10-inch tube pan.
  • Step #7 Drop the remaining apples on top of the batter & sprinkle with the remaining cinnamon sugar.
  • Step #8 Bake in a 325F degree oven for 60-70 mins or until a pick comes out clean.
  • Step #9 Let the cake cool in the pan for 1 hr.
  • Step #10 Remove cake from pan & cool completely on a wire rack.
