Vicki 's Rhubarb Crunch Recipe

Ingredients
  • 2 tbsps cornstarch .
  • 1 1/2 c sifted flour .
  • red food coloring .
  • 1 1/4 c oatmeal .
  • 3/4 c melted butter .
  • 1 tsp cinnamon .
  • 1 c sugar .
  • 1 tsp vanilla .
  • 1 1/2 c brown sugar .
  • 4 c rhubarb .
  • 1 c water

Directions
  • Step #1 Mix flour, oatmeal, brown sugar, melted butter & cinnamon together until crumbly.
  • Step #2 Press 1/2 of the mixture into a greased 9x13 pan.
  • Step #3 Cover up with rhubarb.
  • Step #4 Combine remaining ingredients in saucepan; cook this until thick & clear.
  • Step #5 Pour cooked mixture over rhubarb.
  • Step #6 Top with remaining crumb mixture.
  • Step #7 Bake for 1 hr at 350 degrees Fahrenheit.
  • Step #8 Serve with cream.
