Chopped Salad Recipe

Ingredients
  • 1 head lettuce, finely sliced .
  • 3/4 c feta cheese .
  • 1 medium onion, sliced or 5 green onions, plus tops sliced .
  • 1/3 c black olives, quartered .
  • 1/3 c cucumbers, seeded & sliced .
  • 1 medium green pepper, sliced .
  • 2 small tomatoes, seeded & sliced .
  • 2/3 c pine nuts or sunflower seeds

Directions
  • Step #1 Chop the vegetables into small, 1/4 inch pieces.
  • Step #2 Place in a big bowl & stir in the the nuts.
  • Step #3 Quarter the olives & add to vegs.
  • Step #4 Stir in the crumbled cheese.
  • Step #5 Chop lettuce into fine pieces & mix with veggie mixture.
  • Step #6 Chill for several hrs before serving.
  • Step #7 This is flexible: add or delete vegs/nuts to your liking.
  • Step #8 Diced zucchini, red peppers, fresh herbs, pumpkin seed kernels can all be used in any combination that appeals to your family.
