Millefeuille With Vanilla Cream And Chocolate Mousse Recipe

Ingredients
  • 75 g caster sugar .
  • 1 vanilla pod .
  • icing sugar, to serve .
  • 40 g icing sugar, sifted .
  • 3 medium eggs, separated .
  • 100 g dark chocolate, broken .
  • 75 g butter, cubed .
  • 284 ml double cream .
  • Choclate Mousse .
  • 375 g puff pastry .
  • Vanilla Cream

Directions
  • Step #1 Make vanilla cream by splitting open vanilla pod & removing seeds.
  • Step #2 Add icing sugar.
  • Step #3 Whip cream until stiff peaks form.
  • Step #4 Fold through vanilla mixtures, Refrigerate.
  • Step #5 Make chocolate mousse by melting butter & chocolate.
  • Step #6 Remove from heat.
  • Step #7 Cool slightly.
  • Step #8 Beat egg yolks & sugar until pale & moussey.
  • Step #9 In a separate bowl mix egg whites until stiff.
  • Step #10 Fold choclate mixture into egg yold mixture then fold in egg whites.
  • Step #11 Cover up & chill for at least 6 hrs.
  • Step #12 Preheat oven to 200 Degrees Celsius.
  • Step #13 Cut pastry into 24 equal serving pieces.
  • Step #14 Place pastry on baking tray & bake 10-15 mins until golden & puffed.
  • Step #15 Leave to cool & flatten slightly.
  • Step #16 To serve place piece pastry on each plate.
  • Step #17 Add a layer of vanilla cream, another piece of pastry then chocolate mousse, top this with another piece of pastry & dust with icing sugar.
  • Step #18 Serve with fresh fruit or berries.
