Canadian Potato Salad Recipe

Ingredients
  • 3/4 c mayonnaise .
  • 1/4 c vinegar .
  • 1-2 green onion .
  • seasoning salt .
  • 2 slices cooked bacon .
  • 2 radishes .
  • 7 large potatoes .
  • 2 eggs, hard boiled

Directions
  • Step #1 Peel potatoes & cut into quarters.
  • Step #2 Cook in salted water until almost done.
  • Step #3 Drain & cool potatoes, then dice into 1/2" squares.
  • Step #4 Slice about 5 slices from one of the radishes & reserve.
  • Step #5 Chop the rest very finely.
  • Step #6 Chop the green onions very fine.
  • Step #7 (If no green onions, use a slice of white onion, minced finely).
  • Step #8 Crumble one slice of bacon & cut the other into 1/2" pieces.
  • Step #9 Reserve the pieces for topping.
  • Step #10 Cut about 5 slices from the centre of the eggs to make nice rounds & reserve.
  • Step #11 Dice the rest.
  • Step #12 Mix all the vegetables together carefully (I use my hands & toss them).
  • Step #13 Mix mayonaise with vinegar & a good sprinkle of the Spice uped Salt.
  • Step #14 Stir into potatoes.
  • Step #15 Top with one sliced radish, slices of egg & pieces of bacon.
  • Step #16 Sprinkle top with paprika.
  • Step #17 Let sit in fridge for at least 2 hrs.
