Pork Chops And Apples In Mustard Sauce Recipe

Ingredients
  • 1 tbsp butter, unsalted .
  • 1 c heavy cream (or 1/2 c low-fat yogurt or 1/2 c low-fat sour cream & and 1/2 c low-fat milk) .
  • 2 lbs apples, quartered, cored, peeled & thinly sliced .
  • 1/3 c Dijon mustard (or (to taste) .
  • 1/4 c dry white wine .
  • coarse salt .
  • 4 pork loin chops, about 3/4 " thick, trimmed of excess fat .
  • fresh ground pepper

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Spread the apples in a lightly buttered gratin dish, large enough to hold the pork chops in a single layer.
  • Step #3 Place gratin dish in the oven & bake apples for 15 mins.
  • Step #4 While apples are baking, saute the salted pork chops over med-heat/flame until nicely colored on each side-7 to 8 mins per side.
  • Step #5 Remove gratin dish from the oven & arrange the chops on top of the apples.
  • Step #6 Deglaze the saute pan with the white wine & reduce by half.
  • Step #7 Drizzle reduction over the chops.
  • Step #8 Mix cream (or sourcream/yogurt & milk) & mustard, adding mustard little by little until you are happy with the taste.
  • Step #9 Pour evenly over the chops & apples & grate pepper overall.
  • Step #10 Return to oven & bake an extra 15 mins.
