Thai Noodle Salad With Prawns Recipe

Ingredients
  • 1 tbsp white sugar .
  • 16-20 large cooked prawns .
  • 4 tbsps Thai fish sauce .
  • 2 spring onions, sliced thinly on the diagona .
  • 4 pieces cucumbers, peeled deseeded & sliced .
  • 1 inch piece fresh gingerroot, peeled & sliced finely .
  • 5 tbsps lime juice .
  • 2 tbsps sliced unsalted peanuts or cashews .
  • 6 oz snap peas, cut crossways in half, if large (mangetouts) .
  • 4 whole cooked prawns .
  • 4 tbsps sliced fresh coriander or mint .
  • 1 fresh red chili pepper, deseeded & sliced thinly on the diagonal .
  • lemon slices (to garnish) .
  • 3 oz rice vermicelli or rice noodles

Directions
  • Step #1 Put the rice noodles In a large-ish bowl & pour in enough hot water to cover them.
  • Step #2 Leave them to stand for about 4 mins until soft.
  • Step #3 Drain & rinse under cold running water, drain again & set aside.
  • Step #4 Bring a saucepan of water to the boil.
  • Step #5 Add the mangetouts & return to boil.
  • Step #6 Simmer for 1 min.
  • Step #7 Drain, rinse under cold running water until cold, then drain again & set aside.
  • Step #8 In a large bowl, fish sauce, sugar, ginger, whisk together the lime juice, chili & coriander.
  • Step #9 Stir the cucumbers & spring onions into mixture.
  • Step #10 Add the drained noodles, the mangetouts & the prawns.
  • Step #11 Toss the salad carefully together until the ingredients are coated with the sauce.
  • Step #12 Divide the noodle salad among 4 large plates.
  • Step #13 Sprinkle top with sliced coriander & peanuts [if using], then garnish each plate with a whole prawn & a lemon slice.
  • Step #14 Serve as soon as possible.
