- salt & pepper, to taste .
- 2 bay leaves .
- 2 tbsps fresh lemon juice .
- 1/3 c olive oil .
- 3 garlic cloves .
- 1 lb dried cannellini beans .
- 1 onion, quartered
Directions
- Step #1 Soak beans overnight in cold water to cover.
- Step #2 Drain; place this in Dutch oven with garlic, onion, bay leaves & water to cover by 2 inches.
- Step #3 Bring to a boil; reduce heat.
- Step #4 Simmer covered 30-45 mins, or until tender.
- Step #5 Drain; discard garlic, onion & bay leaves.
- Step #6 Toss with olive oil, parsley, lemon juice, salt & pepper.
