Chilli Sausages With Roast Butternut Mash And Spiced Onions Recipe

Ingredients
  • 50 g butter .
  • salt & freshly ground black pepper .
  • peanut oil or other flavourless oil .
  • 2 butternut squash .
  • 40 g butter .
  • 3 tbsps sweet chili sauce .
  • 1/2 tsp cumin seeds .
  • 1 tsp crushed dried chili pepper flakes .
  • 2 medium onions .
  • For the spiced onions .
  • 8 large thick herby sausages

Directions
  • Step #1 Preheat oven to 200*C (400*F).
  • Step #2 Cut squash in half & scrape out the seeds & fibres, discarding them.
  • Step #3 Cut into four or six large pieces, depending on the size of the squash.
  • Step #4 Place them snugly, cut side down on a rimmed baking sheet.
  • Step #5 Slice the butter thinly & dot over the squash.
  • Step #6 Grind over some salt & pepper.
  • Step #7 Cover up lightly with a sheet of foil wrap & bake for 60 to 75 mins until the flesh is tender, removing as soon as they are ready.
  • Step #8 while the squash is roasting, peel onions & slice finely.
  • Step #9 Melt the butter for the onions in a shallow nonstick frying pan.
  • Step #10 Add the onions & cook this until deep gold.
  • Step #11 Stir in the cumin seeds & crushed chilli flakes, cooking until the onions are spicily fragrant, about 20 mins.
  • Step #12 Put the sausages in a baking dish with a little oil & bake for 20 mins, turning once, until golden brown.
  • Step #13 Add the chilli sauce, tossing the sausages to coat.
  • Step #14 Bake a further 10 mins.
  • Step #15 Scrape out the flesh of the roasted squash into a warm bowl.
  • Step #16 Mash with a fork, seasoning with salt & pepper as you go.
  • Step #17 Tip the onions on top of the mashed squash, sprinkle with the spiced onions.
  • Step #18 Serve with the hot sausages.
