Velvety Cheese Soup Recipe

Ingredients
  • 1/4 c butter .
  • 1/4 c all-purpose flour .
  • 4 c milk .
  • 1 c grated cheddar cheese or Velveeta cheese .
  • 2 c vegetables, cut up .
  • 1/4 c minced onions .
  • salt

Directions
  • Step #1 Melt the butter in the saucepan over medium high heat.
  • Step #2 Saute the onion in the butter until the onion is clear.
  • Step #3 Remove from heat, & add the flour, milk & salt.
  • Step #4 Return to the heat, & cook this until the mixture thickens, stirring constantly.
  • Step #5 Add cheese & stir until melted.
  • Step #6 Add the vegetable pieces & let simmer approximately 30 mins.
  • Step #7 You can use whatever vegetables you or your family likes.
  • Step #8 They can be fresh or frozen.
  • Step #9 Broccoli holds up very nicely.
  • Step #10 Tomatoes taste good as well.
  • Step #11 The salt is to your taste, use more or less depending on the saltiness of the butter or cheese.
