Lebanese: Stuffed Zucchini, Potatoes, & Cabbage Recipe

Ingredients
  • 1 dash cinnamon .
  • 1 dash black pepper .
  • 1 beef bone .
  • 6 baby zucchini, par boiled & center scooped out .
  • 1/2 tsp allspice .
  • 4 oz tomato sauce .
  • 1 lb tomatoes .
  • 1 1/2 tsps salt .
  • 1 c lean ground beef or ground lamb .
  • 1/2 c rice, uncooked .
  • 1 head cabbage, leaves taken off whole & blanched .
  • 3 potatoes, peeled, halved & center scooped out .
  • 1/2 pint water

Directions
  • Step #1 In a bowl mix the rice, ground meat, cinnamon, tomato sauce, allspice, salt & pepper.
  • Step #2 Stuff the zucchini & potatoes with the meat mixture.
  • Step #3 Roll remainder of meat mixture in the blanched cabbage leaves (cigarette style); about 1 - 2 T each.
  • Step #4 In a large pot put 1/2 of the rolled cabbage leaves flat on the bottom.
  • Step #5 Place beef bone on top of cabbage.
  • Step #6 Next, layer the zucchini, then potatoes, then the remainder of the cabbage rolls.
  • Step #7 Top with tomatoes & water.
  • Step #8 Cook, covered, over med-heat/flame for about 25 mins.
