Chili-rubbed Pork Kebabs With Pineapple Salsa Recipe

Ingredients
  • 3 tbsps chili powder .
  • 1 c roughly sliced fresh cilantro leaves .
  • 2 tbsps olive oil .
  • 1/4 tsp black pepper .
  • 1 tbsp fresh lime juice .
  • 1 tsp kosher salt .
  • 24 oz boneless pork chops, cut into cubes to skewer .
  • 1 pineapple, peeled & cut crosswise for grill & then into small pieces (for chunky salsa) .
  • 1 jalapeno, seeded & finely sliced

Directions
  • Step #1 Heat a grill to medium high.
  • Step #2 Grill the pineapple slices 2 mins per side.
  • Step #3 Cut into a small dice, discarding the core.
  • Step #4 In a bowl, mix the pineapple, cilantro, lime juice, jalapeno, pepper, 1 tbsp of the olive oil & 1/2 tsp of salt & set aside.
  • Step #5 Combine the chili powder & remaining salt In a large-ish bowl.
  • Step #6 Add the pork & the remaining oil & toss to coat.
  • Step #7 Thread the pork onto 4 12 inch skewers.
  • Step #8 Grill the kebabs, turning every 2 mins, until cooked through, around 15 mins.
  • Step #9 Serve along with the pineapple salsa.
