Honey-lemon Jelly Recipe

Ingredients
  • 5-6 lemons .
  • 1 (3 oz) package liquid pectin .
  • 2 1/2 c honey

Directions
  • Step #1 Grate rind from enough lemon to measure 4 tsps, set aside.
  • Step #2 Squeeze juice from enough lemons to measure 3/4 c, pour lemon through a wire mesh strainer, discarding seeds & pulp.
  • Step #3 Combine rind, & honey in a 6 quart saucepan, juice, stirring well.
  • Step #4 Bring mixture to a boil over high heat, stirring constantly.
  • Step #5 Quickly stir in the pectin.
  • Step #6 Return mixture to a rolling boil & boil constantly for 1 min.
  • Step #7 Remove from heat & skim off foam with a metal spoon.
  • Step #8 Pour jelly into hot & sterilized jars, filling to 1/4 inch from top & wipe jar rims well.
  • Step #9 Cover up with metal lids & screw on bands.
  • Step #10 Process jars in boiling water bath for 5 mins.
  • Step #11 Cool on wire racks.
  • Step #12 Makes 4 half pints.
