Ingredients
1/4 c olive oil .
1 1/2 c dry red wine .
6 c beef bouillon .
1 stalk celery, sliced .
1 onion, sliced .
5 lbs top round roast or boneless bottom round roast .
2 garlic cloves, minced .
2 carrots, peeled & sliced .
salt & pepper
Directions
Step #1 Preheat oven to 350 degrees F.
Step #2 Heat the oil In a large-ish pan over medium-high heat.
Step #3 Brown the meat on all sides & remove the meat to a roasting pan.
Step #4 Pour the wine around the meat.
Step #5 Sauté the cut vegetables until golden brown & add to the roasting pan.
Step #6 Pour the beef bouillon into the pan.
Step #7 Pour liquid over the roast & cover.
Step #8 Bake for 30 to 45 mins per lb.
Step #9 Remove from oven & let rest for 15 mins.
