Family Heirloom Carrot Cake Recipe

Ingredients
  • 2 c flour .
  • 2 tsps baking soda .
  • 1 tsp salt .
  • 1 tsp vanilla .
  • 4 large eggs .
  • 1 1/2 c vegetable oil .
  • 2 tsps cinnamon .
  • 1/2 tsp nutmeg .
  • 1 c sugar .
  • 1 (8 oz) cream cheese, softened .
  • Cream Cheese frosting .
  • 3 c shredded carrots .
  • 1 lb powdered sugar .
  • 2 tsps vanilla .
  • 1 c packed light brown sugar .
  • 1 c raisins .
  • 1 1/2 c coarsely sliced pecans

Directions
  • Step #1 In large bowl, flour, sugars, beat oil, eggs & vanilla.
  • Step #2 Add & mix in cinnamon, nutmeg, soda & salt.
  • Step #3 Mix in carrots.
  • Step #4 Fold/mix in pecans & raisins.
  • Step #5 Pour batter evenly into greased & floured 9" cake pans.
  • Step #6 Bake in 350° oven for 50-55 mins til toothpick comes out clean.
  • Step #7 Cool 5-10 mins, turn out onto rack to cool completely.
  • Step #8 For frosting:.
  • Step #9 Beat ingredients til smooth.
  • Step #10 Place 1 cake onto plate, frost top.
  • Step #11 Place second cake on top, frost sides & top of cake.
  • Step #12 I store this in my airtight tupperware cake thingy in the refrigerator.
