Peking Lamb Recipe

Ingredients
  • 2 kg leg of lamb .
  • 2 tsps sesame oil .
  • 1 piece cinnamon .
  • Sauce .
  • 2 whole star anise .
  • 3 leeks .
  • 3 green onions, sliced .
  • 2 tbsps brown sugar .
  • 160 ml reserved stock .
  • 2 tbsps hoisin sauce .
  • 3 tbsps sugar .
  • 4 tbsps dark soy sauce .
  • 1 tbsp dry sherry .
  • 8 slices fresh ginger .
  • 2 tbsps dark soy sauce

Directions
  • Step #1 Place lamb In a large-ish pot & add spices, green onions, soy sauce & sherry.
  • Step #2 Cover up with cold water & bring to the boil.
  • Step #3 Cover up & reduce to a simmer.
  • Step #4 Cook for a further 2 hrs to cook through.
  • Step #5 Meanwhile trim leeks & cut in half lenghtways & soak in cold waterto remove grit.
  • Step #6 Lift lamb out of pot & drain well.
  • Step #7 Reserve liquid (160mls) (and a bit more in another c) & add the rest of the sauce ingredients to the pot.
  • Step #8 Bring to the boil & add the lamb, cover, reduce heat & cook 15 mins turning to coat in the sauce.
  • Step #9 Slice leeks at an angle.
  • Step #10 Add to the pot, cover & cook a further 5-10 mins.
  • Step #11 If necessary add some more reserved stock.
  • Step #12 Take off heat & rest lamb for 10 mins.
  • Step #13 Then slice.
  • Step #14 finely.
  • Step #15 Arrange on a serving platter with a little reserved sauce.
  • Step #16 Allow everyone to make their own pancakes/wraps.
