Tomato Dill Bread Recipe

Ingredients
  • 2 tbsps sugar .
  • 3 1/2-4 1/2 c all-purpose flour .
  • 3 tbsps butter, melted .
  • 1/4 oz active dry yeast .
  • 2 tbsps vegetable oil .
  • 1 tbsp minced fresh dill .
  • 1 tbsp minced fresh parsley .
  • 1 1/2 c sliced peeled tomatoes .
  • 2 tsps salt .
  • 1 tbsp minced fresh oregano .
  • 1/2 c warm water (110*-115*)

Directions
  • Step #1 In a large-ish bowl, dissolve yeast & sugar in water; set aside.
  • Step #2 in a mixer or food processor/blender, parsley, dill, puree tomatoes with oil, oregano & salt.
  • Step #3 add to yeast mixture.
  • Step #4 add enough flour to make a smooth dough.
  • Step #5 turn onto a lightly floured surface; knead until smooth & elastic -- about 6-8 mins.
  • Step #6 place this in a greased bowl, turning once to grease top.
  • Step #7 cover & let rise in a warm place until doubled, about 1 hr.
  • Step #8 punch down & divide in half -- shape into loaves.
  • Step #9 place this in two greased 8x4" loaf pans.
  • Step #10 cover & let rise until doubled.
  • Step #11 about 1 hr.
  • Step #12 bake this at 400* for 15 mins.
  • Step #13 reduce heat to 350*.
  • Step #14 bake for 25 mins longer or until done.
  • Step #15 brush with melted butter --.
