Step #1 Place the melon, the Serrano Chili, the lime rind, basil, half the green papper, half the cucumber, half the avocado, lime juice, 2 c of the grapes, dill & parsley into a food processor/blender.
Step #2 Process until smooth.
Step #3 Pour into a large bowl.
Step #4 Cut the remaining 1/2 c grapes into quarters & add to the bowl.
Step #5 Dice the remaining avocado, cucumber & green pepperand add to the bowl.
Step #6 stir in the the scallions & white wine vinegar.
Step #7 Spice up with salt & pepper & hot pepper sauce (if using).
Step #8 Cover up & put in the fridge for at least 2 hrs, or up to 24 hrs.
Step #9 For a pretty presentation, reserve some of the sliced green onions & sprinkle it over each serving.
