Fruity Gazpacho Recipe

Ingredients
  • salt & pepper .
  • 1 avocado, halved .
  • 1/2 honeydew melon, cubed .
  • 3 tbsps fresh dill .
  • 1 green bell pepper, halved .
  • 1/2 c fresh basil .
  • 2 tbsps white wine vinegar .
  • hot pepper sauce (optional) .
  • 2 1/2 c green grapes .
  • 1/2 serrano chili, seeded .
  • 1 tbsp lime zest .
  • 2 tbsps fresh parsley .
  • 1 cucumber, halved .
  • 4 green onions, sliced .
  • 2 tbsps fresh lime juice

Directions
  • Step #1 Place the melon, the Serrano Chili, the lime rind, basil, half the green papper, half the cucumber, half the avocado, lime juice, 2 c of the grapes, dill & parsley into a food processor/blender.
  • Step #2 Process until smooth.
  • Step #3 Pour into a large bowl.
  • Step #4 Cut the remaining 1/2 c grapes into quarters & add to the bowl.
  • Step #5 Dice the remaining avocado, cucumber & green pepperand add to the bowl.
  • Step #6 stir in the the scallions & white wine vinegar.
  • Step #7 Spice up with salt & pepper & hot pepper sauce (if using).
  • Step #8 Cover up & put in the fridge for at least 2 hrs, or up to 24 hrs.
  • Step #9 For a pretty presentation, reserve some of the sliced green onions & sprinkle it over each serving.
