Step #1 place the dried apricots in a saucepan with just enough water to cover.
Step #2 bring to boil & as soon as possible turn off.
Step #3 allow to soak until soft about 15 mins.
Step #4 In a large glass jar (don't use plastic or metal) place the apricots, any remaining liquid, the vanilla beans & the vodka.
Step #5 Give it a good stir & place this in the fride.
Step #6 Allow to rest in the fridge about a week, stirring or carefully shaking on occasion.
Step #7 You can either strain at this point & decant or, if you use a 'sun tea' type of jar with a spiggot at the bottom you can just pour directly from the jar.
