Taco Rice Salad Recipe

Ingredients
  • 1 tsp ground cumin .
  • 2 garlic cloves, minced .
  • 3 c cooked yellow rice .
  • Dressing .
  • 3 c sliced tomatoes .
  • Salad .
  • 1 tsp chili powder .
  • 2/3 c picante sauce .
  • 1 tsp chili powder .
  • 1 lb ground round .
  • 1/4 tsp salt .
  • 1/2 c shredded reduced-fat sharp cheddar cheese .
  • 1/4 tsp black pepper .
  • 6 c torn romaine lettuce leaves .
  • 1 c frozen whole kernel corn, thawed .
  • Remaining Ingredients .
  • 1/2 c sliced red onions .
  • 1/2 tsp ground cumin .
  • 2/3 c nonfat sour cream .
  • 1 (15 oz) can black beans, rinsed & drained

Directions
  • Step #1 To make salad: Heat a big nonstick skillet over medium-high heat.
  • Step #2 Coat skillet with nonstick cooking spray.
  • Step #3 Add in beef & garlic; cook 9 mins or until browned, stirring to crumble.
  • Step #4 Drain meat mixture & return to skillet.
  • Step #5 Stir in rice & the next 4 ingredients; cool slightly.
  • Step #6 Put lettuce & the next 4 ingredients In a large-ish bowl, toss to mix.
  • Step #7 To make the dressing: Mix together all the dressing ingredients, using a whisk.
  • Step #8 Spoon dressing over lettuce mixture; toss to coat.
  • Step #9 Place 1 1/2 c lettuce mixture on 6 individual plates.
  • Step #10 Top each with 3/4 c rice mixture & about 1 1/2 tbsps cheese.
