Fettuccini Carbonara Recipe

Ingredients
  • fresh parsley, to garnish .
  • grated parmesan cheese, to garnish .
  • 1 lb fettuccine pasta .
  • 6 slices chicken bacon .
  • 1/2 c freshly grated parmesan cheese .
  • 3 tbsps butter .
  • 3 green onions, sliced .
  • salt & pepper, to taste .
  • 4 eggs .
  • 1/2 tsp nutmeg

Directions
  • Step #1 Cook pasta according to package directions until al dente (just tender).
  • Step #2 In a skillet, cook chicken bacon in 1 tbsps of butter until lightly browned.
  • Step #3 Add onions & cook briefly; set aside.
  • Step #4 Beat eggs with nutmeg, salt & pepper; set aside.
  • Step #5 Drain pasta well & return to pot.
  • Step #6 Add chicken bacon mixture & remaining butter; toss well over low heat/flame.
  • Step #7 Add eggs & toss until eggs are completely cooked & pasta is coated.
  • Step #8 Remove from heat & add parmesan cheese; toss well.
  • Step #9 Serve as soon as possible with sliced parsley & extra parmesan cheese if desired.
