Healthy Alternative Buttermilk Pancakes Recipe

Ingredients
  • 1 tsp baking powder .
  • 1/2 tsp baking soda .
  • 1/4 c egg substitute .
  • 1/2 c whole wheat flour .
  • 2 tbsps prune puree .
  • 1/2 c oat bran .
  • 1 c low-fat buttermilk .
  • 1 tbsp Splenda sugar substitute

Directions
  • Step #1 Mix together dry ingredients.
  • Step #2 In a separate bowl lighly beat together egg, buttermilk, & applebutter (prune puree may be substituted for any pureed fruit or fat replacement product).
  • Step #3 Mix dry & wet together.
  • Step #4 Let stand a few mins for oatbran to absorb the liquid.
  • Step #5 Preheat griddle to medium high.
  • Step #6 Spray with non-stick spray, scoop about 1/3 c of batter onto griddle.
  • Step #7 Optionally, add fresh fruit such as bananas or blueberries to pancake at this point.
  • Step #8 When starts to bubble, flip & cook a min more.
