3 lbs macintosh apples or rome apples (about 8 large) .
2 tbsps apple juice .
12 slices French bread or Italian bread, ground fine in a food processor/blender (about 2 1/2 c) .
2/3 c water .
1 c whipped cream (optional) .
cooking spray .
1/3 c sugar .
For applesauce .
4 tbsps unsalted butter .
1 c lingonberry preserves or raspberry preserves
Directions
Step #1 Preheat oven to 325F degrees.
Step #2 To make applesauce: Peel & core apples & cut into 1 inch.
Step #3 In a large saucepan bring water, apples, stirring every once in awhile, & sugar to a boil & let simmer, until apples are soft & starting to fall apart, about 25 mins.
Step #4 Don't cook or mash the sauce until smooth.
Step #5 Applesauce may be made 3 days in advance & kept chilled until you are ready to make the pudding.
Step #6 In a large heavy skillet melt butter over moderate heat.
Step #7 Once melted, stir in the apple juice & bread crumbs.
Step #8 Stir bread crumbs continuously until they are well toasted & golden in color, about 5 mins.
Step #9 Lightly spritz a 1 1/2-quart casserole dish with cooking spray.
Step #10 Place 1 c of bread crumbs in the bottom, top this with 2 c of applesauce, followed by 1/2 c of preserves.
Step #11 Repeat layers, finishing with the remaining 1/2 c of crumbs.
Step #12 Bake pudding 25 mins, or until top is golden brown.
Step #13 Serve pudding warm with optional garnish of whipped cream & extra preserves.
