Refrigerator Bran Muffins Recipe

Ingredients
  • 2 1/2 c buttermilk .
  • 2 eggs .
  • 3 c bran flakes (with or without raisins) .
  • 1/2 tsp salt .
  • 1 1/4 tsps baking soda .
  • 1/3 c oil .
  • 2 1/2 c all-purpose flour .
  • 1 c sugar

Directions
  • Step #1 In large bowl, mix buttermilk, oil & eggs; beat well.
  • Step #2 Add all remaining ingredients; stir just until dry ingredients are moistened.
  • Step #3 Battter can be baked as soon as possible or stored in tightly covered container in refrigerator for up to 2 weeks.
  • Step #4 When ready to bake, heat oven to 400F degrees F.
  • Step #5 Line desired number of muffin c with paper baking c.
  • Step #6 Stir batter; fill paper-lined muffin c 2/3 full.
  • Step #7 Bake at 400F degrees F for 20 t0 25 mins or until toothpick inserted in center comes out clean.
  • Step #8 Immediately remove this from pan.
  • Step #9 Serve warm.
