Apricot Amaretto Jam Recipe

Ingredients
  • 1 c fresh orange juice .
  • 1 1/4 c sugar .
  • 1 2/3 c dried apricots, sliced thinly .
  • 2 tbsps Amaretto .
  • 2 tsps finely grated orange rind .
  • 1 1/2 c water .
  • 2 tbsps fresh lemon juice .
  • 1/2 c slivered almonds

Directions
  • Step #1 Place apricots & water in medium bowl, cover & let this stand overnight.
  • Step #2 Combine apricot mxture & rind in large saucepan; bring to a boil.
  • Step #3 Reduce heat & let simmer uncovered about 10 mins or until apricots are soft.
  • Step #4 Add juices & sugar; stir over heat without boiling until sugar dissolves.
  • Step #5 Boil, uncovered, stirring accasionally about 30 mins or until jam jells when tested.
  • Step #6 Stir in almonds & liqueur.
  • Step #7 Pour hot jam into hot sterilised jars, seal while hot.
