Carrot Casserole Recipe

Ingredients
  • 1/2 c carrots, cooking liquid .
  • 1/4 tsp pepper .
  • 1/3 c fine dry breadcrumbs .
  • 1/2 c evaporated milk .
  • 1 lb uncooked carrots .
  • 1/2 tsp salt (if needed) .
  • 1/4 tsp nutmeg .
  • 1 tbsp brown sugar .
  • 2 eggs

Directions
  • Step #1 Cook carrots in salted water until done.
  • Step #2 Drain & reserve 1/2 c liquid.
  • Step #3 Place carrots in mixer (or mixer or food processor/blender) & add the 1/2 c liquid, then add the evaporated milk.
  • Step #4 Blend for just a few seconds, then add other ingredients & mix until smooth.
  • Step #5 Pour into buttered casserole.
  • Step #6 Bake uncovered at 350F for 1 hr or until firm.
