Banana Meringue Delight Recipe

Ingredients
  • FILLING .
  • 2 large bananas .
  • 1/8 tsp cream of tartar .
  • TOPPING .
  • 1 dash salt .
  • 1/4 tsp vanilla .
  • 3 c skim milk .
  • 3 egg whites .
  • 2 oz instant vanilla pudding .
  • MERINGUE CRUST .
  • 2 tbsps sugar .
  • 8 graham cracker squares, Ground

Directions
  • Step #1 Preheat oven to 300F degrees Farenheit.
  • Step #2 In large bowl, beat egg whites until slightly stiff.
  • Step #3 Gradually add sugar & cream of tartar & continue to beat.
  • Step #4 Add vanilla & salt & continue beating until whites stand in stiff peaks.
  • Step #5 Spray 9 x 9- inch glass baking dish with non-stick cooking spray.
  • Step #6 Spread meringue over entire bottom & sides of dish to form a crust.
  • Step #7 Bake in 300F degrees Fahrenheit oven for 45 mins.
  • Step #8 Remove & cool.
  • Step #9 After crust has cooled, prepare pudding mix according to package directions & fold in sliced bananas.
  • Step #10 Pour pudding mixture into crust & sprinkle ground graham crackers on top.
  • Step #11 Chill & serve.
