Upside Down Potpie Sandwiches
Ingredients
1/4 tsp fresh ground black pepper .
2 tsps baking powder .
1/4 c canola oil .
2 medium carrots, sliced .
2 celery ribs, thinly sliced .
1 large onion, sliced .
3/4 lb boneless skinless chicken breasts, cut into bite-size pieces .
2 sprigs thyme .
1/2 tsp salt .
2 c sifted all-purpose flour .
1 garlic clove, minced .
8 c reduced-sodium chicken broth .
1 tsp baking soda .
2 medium sweet potatoes, peeled & cut into 1-inch cubes .
2 medium turnips, peeled & cut into . 5-inch cubes .
1 1/2 tbsps cornstarch .
1/2 tsp salt .
1 bay leaf .
1 c buttermilk .
2 tbsps olive oil .
1/2 c water
Directions
Step #1 To prepare filling: Heat 1 tbsp of the oil In a large-ish dutch over medium-high heat.
Step #2 Add chicken & cook 5-7 mins or until well browned.
Step #3 Transfer chicken to small plate or bowl.
Step #4 Add the remaining 1 tbsp of oil to the dutch oven along with the celery, carrots & onion.
Step #5 Cook, stirring every once in awhile, until lightly browned, about 3-5 mins.
Step #6 Add garlic & return chicken & any released juices to the dutch oven.
Step #7 Stir in the sweet potatoes, broth, bay leaf, thyme, turnips, salt & pepper.
Step #8 Bring to a boil & then reduce heat & simmer 20 mins or until vegetables are tender.
Step #9 Remove bay leaf.
Step #10 To prepare biscuits: While filling simmers, baking powder, In a large-ish bowl, mix flour, baking soda & salt.
Step #11 Blend with fork.
Step #12 Add oil & buttermilk & mix until ingredients are just incorporated.
Step #13 Set aside.
Step #14 In a small bowl, dissolve cornstarch in water to form a paste.
Step #15 Stirn cornstarch mixture into simmering filling & cook 2-3 mins until thickened.
Step #16 Drop biscuit mix by tbsps over top of filling in dutch oven.
Step #17 Simmer uncovered 10 mins.
Step #18 Cover up & let simmer 10 mins longer or until biscuits are cooked through.
