Wild Rice Venison Casserole Recipe

Ingredients
  • 1/2 tsp chili powder .
  • 1/2 c green peppers, sliced .
  • 1/4 c flour .
  • 1/2 onion, sliced .
  • 1 c raw washed wild rice .
  • 1/2-1 tsp salt (seasoned salt is also good) .
  • 1 lb venison .
  • 3 tbsps bacon fat or butter .
  • 1 1/2 c water .
  • 1/4 tsp curry powder .
  • 2 c canned tomatoes .
  • 1 garlic clove, minced

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Parboil rice with water; boil till almost tender; I'm sure you could also use a prepared wild rice mix.
  • Step #3 Dredge venison in flour & brown in a heavy skillet with the bacon fat or butter & sliced onion.
  • Step #4 Place the venison, rice, garlic, tomatoes & seasonings to a 3 qt baking pan & bake for 1 hr.
