• 2 tbsps cooking oil .
• 1/4 c unsweetened applesauce .
• 1/2 c flour .
• 2 tsps baking powder .
• 1 1/2 c cornmeal .
• 1 1/4 c skim milk .
• 2 egg whites .
• 1/4 tsp baking soda .
• 2 tbsps sugar .
• 1/2 tsp salt

• Step #1 Combine dry ingredients.
• Step #2 Mix milk,applesauce,egg whites & cooking oil.
• Step #3 Stir into dry ingredients until just moistened.
• Step #4 Fill greased muffin c 2/3 full.
• Step #5 Bake at 400F 18-20 mins.
