Spicy Korean Glazed Pork Ribs Recipe

Ingredients
  • 3 tbsps sesame oil .
  • 1/2 c packed light brown sugar .
  • 3 tbsps korean red pepper flakes or 2 tbsps crushed red pepper flakes .
  • 2 quarts water .
  • 4 oz fresh ginger, unpeeled & thinly sliced (about 1 c) .
  • 8 large garlic cloves, minced .
  • 1 1/2 c soy sauce .
  • 5 lbs pork baby back ribs, trimmed of excess fat

Directions
  • Step #1 In a large roasting pan set over 2 burners, cover the ribs with cold water & bring to a boil over moderately high heat.
  • Step #2 Boil for 5 mins.
  • Step #3 Transfer the ribs to a large plate; discard the water.
  • Step #4 Return the pan to the 2 burners & add the water.
  • Step #5 Add the ribs & ginger; bring to a boil.
  • Step #6 Add the sugar, soy sauce, garlic, sesame oil & chile flakes.
  • Step #7 Cover up with foil wrap & boil over moderately high heat for 7 mins.
  • Step #8 Simmer over moderately low heat, until tender, turning the ribs a few times, about 20 mins.
  • Step #9 Preheat the broiler.
  • Step #10 Transfer the ribs to a large rimmed baking sheet, meaty side down.
  • Step #11 Boil the braising liquid until thickened & intensely flavored, about 10 mins.
  • Step #12 Strain the liquid; you should have about 2 c.
  • Step #13 Generously brush the ribs with the braising liquid & broil 4 inches from the heat, rotating the pan, until glazed & lightly charred, about 3 mins.
  • Step #14 Turn the ribs meaty side up & brush again with the braising liquid.
  • Step #15 Broil, until the ribs are glazed, brushing every once in awhile & rotating the pan, about 4 mins.
  • Step #16 Let rest for 5 mins, then cut between the ribs, mound on a platter & serve.
