Pork Cutlets Parmesan Recipe

Ingredients
  • 1/4 c grated parmesan cheese .
  • 1 tbsp water .
  • 12 oz pork tenderloins .
  • 3 tbsps all-purpose flour .
  • 1 tbsp coarse salt .
  • 1/4 c dried breadcrumbs .
  • lemon wedges (optional) .
  • 2 large egg whites .
  • parsley sprigs (optional) .
  • 2 tbsps olive oil

Directions
  • Step #1 Slice 12 oz pork tenderloin into 12 rounds.
  • Step #2 Place rounds between two sheets of plastic wrap; with a meat mallet or small heavy skillet, lb to 1/8 inch thick.
  • Step #3 In shallow bowl, beat 2 large egg whites with 1 tbsp water.
  • Step #4 In another bowl, mix 1/4 c each plain dried breadcrumbs & grated parmesan.
  • Step #5 Place 3 tbsps all-purpose flour in a third bowl.
  • Step #6 Spice up pork with coarse salt.
  • Step #7 Dip pork in flour, then in egg mixture.
  • Step #8 Dredge in breadcrumb mixture; pat it inches In large nonstick skillet, heat 1 tbsp olive oil medium-high heat.
  • Step #9 Saute half the cutlets until golden brown & cooked through, about 1 min per side.
  • Step #10 Repeat with another tbsp oil & remaining pork.
  • Step #11 Serve with lemon wedges & parsley sprigs.
